To print the recipe check the full recipe on my blog: http://www.homecookingadventure.com/recipes/no-bake-triple-chocolate-mousse-cake Ingredients Makes about 12 servings Oreo Crust 7 oz (200g) oreo cookies 4 tbsp (60g) butter, melted Dark Chocolate Mousse 5 oz (150g) semi-sweet chocolate 1/2 cup (120g) whipping cream 2/3 cup (160g) whipping cream (35% fat), chilled 1 tsp (4g) gelatin powder 1 tbsp +1 tsp (20ml) cold water Milk Chocolate Mousse 5 oz (150g) milk chocolate 1/2 cup (120g) whipping cream 2/3 cup (160g) whipping cream (35% fat), chilled 1 tsp (4g) gelatin powder 1 tbsp +1 tsp (20ml) cold water White Chocolate Mousse 5 oz (150g) white chocolate 1/2 cup (120g) whipping cream 2/3 cup (160g) whipping cream (35% fat), chilled 1 tsp (4g) gelatin powder 1 tbsp +1 tsp (20ml) cold water For decorating (optional) Cocoa powder Fresh berries 1. Prepare the crust. Place the oreo cookies into the bowl of a food processor and crush until crumbs form. Add melted butter and process until evenly moistened. 2. Press the mixture into the bottom of a greased 8 inch (20 cm) springform pan using the back of a spoon. Refrigerate until the first layer of mousse is prepared. 3. Prepare dark chocolate mousse. In a heat proof bowl add the semi-sweet chocolate and 1/2 cup (120g) whipping cream. Place the bowl over a saucepan with simmering water, over low heat until all the chocolate is melted. Meanwhile dissolve gelatin in cold water and let it swell for about 5 to 10 minutes. Place the gelatin over low heat just until the gelatin dissolves and pour it over the melted chocolate mixture. Let the chocolate mixture cool completely at room temperature. 4. Whip the remaining 2/3 cup (160g) cold whipping cream until stiff peaks form. Add melted chocolate mixture and mix until well combined. 5. Pour the chocolate mousse over the crust and refrigerate for about 15-20 minutes to set slightly, until you prepare the next layer of chocolate mousse. 6. Repeat the same steps for preparing the milk and white chocolate mousse layers. 7. Refrigerate the cake for 4 hours or overnight to set. 8. Run a knife around the edges of the cake to remove the sides of the pan. 9. Before serving dust the top of the cake with cocoa powder and decorate with fresh berries if desired. Enjoy! Melt the butter in the microwave for about 30 seconds or in a saucepan. Pour the cookie crumbs and melted butter into a medium sized mixing bowl and mix together with a wooden spoon until well combined. Pour the mixture into an 8inch or 20cm lined cake tin and press down with the back of a spoon until firmly packed and even. Place the cheesecake base into the fridge to set. Cut the chocolate into small pieces with a serrated knife and place into a heat proof bowl. Melt the chocolate over a saucepan of simmering water, stirring occasionally until completely smooth and leave to cool. Pour the heavy cream into a medium sized mixing bowl and beat with a whisk until softly whipped, set to the side. In a large mixing bowl combine the cream cheese and sugar and beat with a whisk until well combined. Pour the softly whipped cream and cooled melted chocolate into the bowl with the cream cheese and sugar. Mix the ingredients together with a whisk for a few minutes until well incorporated. Pour the cheesecake filling into the cake tin and use an offset spatula to smooth out the top. Bang the cake tin on the counter a few times to remove any air bubbles and place into the fridge to firm. To make the topping for the chocolate cheesecake cut the second lot of chocolate into small pieces and place in a heat proof bowl. Pour the cream into a small saucepan and heat over medium heat until it just starts to boil. Remove the cream from the heat and pour over the chocolate and leave to stand for about 5 minutes. Mix the chocolate and cream together until completely smooth and pour over the cheesecake. This No-Bake White Chocolate Raspberry Cheesecake is one of the best no-bake cheesecakes ever and it’s very easy to prepare. The raspberry heart shapes on top makes it ideal for Valentine’s Day but is perfect for any other occasion as well. To print the recipe check the full recipe on my blog: http://www.homecookingadventure.com/recipes/no-bake-white-chocolate-raspberry-cheesecake Ingredients Makes about 10 servings Crust 7 oz (200g) oreo cookies 4 tbsp (60g) butter, melted Raspberry Coulis 1 1/2 cups (150g) raspberries, fresh or frozen 1/4 cup (50g) sugar 1 tbsp (15ml) lemon juice 1 tsp (2g) cornstarch Cream Cheese Filling 7 oz (200g) white chocolate, small pieces 4 tbsp (60g) whipping cream 1 pound (500g) cream cheese, room temperature 1/4 cup (30g) powdered sugar Lemon zest of a lemon 2 tsp (10g) vanilla extract 1 cup (240g) whipping cream (35% fat), chilled 1. Prepare the raspberry coulis. In a small saucepan, whisk together suga,cornstarch and lemon juice. Add raspberries and bring to a boil over medium-low heat, stirring constantly. Simmer for 5 minutes and remove from heat. Sieve the sauce to remove seeds and set aside to cool down until ready to use. 2. Prepare the crust. Place the oreo cookies into the bowl of a food processor and crush until crumbs form. Add melted butter and process until evenly moistened. 3. Press the mixture into the bottom of a greased 8 inch (20 cm) springform pan using the back of a spoon. Refrigerate until the filling is prepared. 4. Prepare the filling. Place white chocolate and the 4 tbsp of cream into a heatproof bowl and place over a pan with simmering water. Melt over low heat. 5. In a large bowl mix cream cheese until smooth. Add powdered sugar, lemon zest and vanilla extract and mix to combine. Mix in melted chocolate and set aside. 6. In another bowl mix whipping cream until stiff peaks form. Gently fold the whipped cream into the white chocolate and cream cheese mixture. 7. Pour the filling over the prepared crust, use an offset spatula to spread it evenly. 8. Place the raspberry coulis into a piping bag fitted with a plain small tip and pipe small circles in a swirl pattern on the top of the cheesecake. 9. Use a toothpick and run it into the center of each circle to create heart shapes. 10. Cover and refrigerate the cheesecake for at least 4 hours or better overnight. 11. Serve with more raspberry coulis alongside. Enjoy! Chocolate Mousse Cheesecake INGREDIENTS Crust 20 chocolate sandwich cookies ¼ cup brown sugar 7 tablespoons butter, melted Cheesecake 32 ounces cream cheese, softened 4 ounces melted semisweet chocolate 1 tablespoon cocoa powder 1½ cups sugar 2 teaspoon vanilla extract 4 eggs 1 ½ cup heavy cream ¼ cup powdered sugar Chocolate Ganache 16 ounces chocolate chips 2 cups heavy cream, hot PREPARATION Preheat oven to 300˚F/150˚C. Place cookies in plastic bag and crush them into a fine crumb using a rolling pin. Alternatively, a food processor can be used to crush the cookies. Pour the cookie crumbs into a medium bowl with the melted butter and brown sugar. Mix until the crumbs take on the character of a coarse, wet sand. Pour the crumbs into a 9-inch spring pan. Press the crumb firmly into the pan, making sure to coat the bottom evenly. Once the crust has been formed, place it in the refrigerator to firm up. Add cream cheese, melted chocolate, cocoa powder, and sugar to a large bowl and whisk, either by hand or with an electric mixer, until all the ingredients are incorporated. (NOTE: If mixing by hand, it is recommended to microwave the cream cheese before whisking in order to soften it up.) Add vanilla extract and eggs, and continue to whisk until mixture is smooth and glossy. In a separate bowl, combine heavy cream and powdered sugar. Whisk until the cream develops a mousse-y texture and soft peaks form. Adding a small amount at a time, carefully fold in the whipped cream into the cream cheese batter, being careful not to let the air out of the fluffy mixture. Fold just until incorporated. Once combined, pour the batter over the prepared cookie crust inside the springform pan. Use a spatula to smooth out the top. Give the pan a slight jiggle to release any large air bubbles that may be trapped in the batter. Place the filled pan on top of a sheet of aluminium foil and fold the foil up the sides on the outside of the pan. Then place the wrapped pan into a larger baking pan or dish lined with 2 paper towels at the bottom. The aluminium foil will keep water from seeping into the bottom of the pan and the paper towels ensure that the heat is distributed evenly along the bottom of the pan. Fill the larger pan with about 1 inch of hot water. Bake at 300˚F/150˚C for 60-70 minutes--checking every 15-20 minutes to add more hot water to the larger dish, as necessary. Once out of the oven, immediately run a small sharp knife around the outside of the cheesecake to release it from the pan. Allow the cheesecake to cool completely before removing it from the pan. Prepare the ganache by combining chocolate chips with hot cream. Stir until chocolate is completely melted and ganache is smooth and glossy. Pour ganache evenly over the cooled cheesecake. Refrigerate the ganache covered cake for 30 minutes before cutting and serving. Enjoy! SUBSCRIBE HERE: http://bit.ly/2piyn6g Subscriber Count: 668 7 oz (200g) oreo cookies 4 tbsp (60g) butter, melted Raspberry Coulis 1 1/2 cups (150g) raspberries, fresh or frozen 1/4 cup (50g) sugar 1 tbsp (15ml) lime juice 1 tsp (2g) cornstarch Cream Cheese Filling 3.5 oz (100g) white chocolate chips 3.5 oz (100g) dark chocolate chips 4 tbsp (60g) whipping cream 1 pound (500g) cream cheese, room temperature 1/4 cup (30g) powdered sugar 2 tsp (10g) vanilla extract 1 cup (240g) whipping cream (35% fat), chilled\ Prepare the raspberry coulis. In a small saucepan, whisk together sugar, cornstarch and lime juice. Add raspberries and bring to a boil over medium-low heat, stirring constantly. Simmer for 5 minutes and remove from heat. Sieve the sauce to remove seeds and set aside to cool down until ready to use. Prepare the crust. Place the Oreo cookies into the bowl of a food processor and crush until crumbs form. Add melted butter and process until evenly moistened. Press the mixture into the bottom of a greased 6 inch springform pan using the back of a spoon. Refrigerate until the filling is prepared. Prepare the filling. Place white chocolate and dark chocolate and the 4 tbsp of cream into 2 microwave safe bowls and microwave for 1 minute. In a large bowl mix cream cheese until smooth. Add powdered sugar and vanilla extract and mix to combine. Mix in melted chocolate and set aside. In another bowl mix whipping cream until stiff peaks form. Gently fold the whipped cream into the white chocolate and cream cheese mixture. Pour the filling over the prepared crust, use an offset spatula to spread it evenly. Place the raspberry coulis into a squeeze bottle and pipe small circles in a swirl pattern on the top of the cheesecake. Use a toothpick and run it into the center of each circle to create heart shapes. Cover and refrigerate the cheesecake for at least 4 hours or better overnight. Preheat oven to 350˚F/180˚C. 2. Prepare the brownie batter and pour into greased springform pan. Bake until set, about 20-25 minutes. 3. Meanwhile, beat the cream cheese and sugar until incorporated. Add beaten eggs and vanilla, and beat again until smooth. 4. Remove brownies and lower oven temperature to 325˚F/170˚C. 5. Pour cheesecake batter over brownie bottom, and bake for 50 minutes until set and slightly jiggly. 6. Remove cheesecake and refrigerate for 4 hours, or overnight. 7. Heat or microwave whipping cream to just before boiling and pour over chocolate chips. 8. Stir continuously until the chocolate is melted and smooth. 9. My blog and printable recipe: https://gracioustreatz.wixsite.com/bakewithlove/3-layers-nutella-cheesecake Ingredients: For the base: 250g or 24 oreo cookies 70g (1/4 cup) butter (melt it after weighing) Cheesecake layers: 500g (2 1/4 cup) cream cheese (total) 100g (1/2 cup) sugar 1 tsp vanilla extract 250g (1 cup) heavy cream 1 tbsp gelatin 1/4 cup water Nutella (layer 1 = 2 1/2 tbsp; layer 2 = 1 tbsp) Chocolate ganache: 80g (3/4 cup) chocolate chips 60g (1/4 cup) heavy cream 1 tsp melted gelatin I am using 7 inch round ring baking pan. You can also use spring form pan. How to get even layers: 1. Weigh your mixing bowl. (empty) = A 2. Weigh again after you have mixed the cream cheese and heavy cream. = B B - A ÷ 3 = C* Instructions: For the base 1. Separate the oreo cookies from the cream. Put into a food processor and pulse until it is fine. Add in the melted butter and pulse until we'll combined like a wet sand. 2. Pour onto a prepared ring baking pan. Use a spatula to press down the mixture until it is levelled and flat. Freeze it in the freezer while preparing for the next step. For cheese layer 1 3. In a large bowl, add the cream cheese. Mix until it is softened. Add the vanilla extract. Gradually add in the sugar. Continue mixing until it is creamy and smooth. 4. In another bowl, add the cream. Beat until it is slightly thickened (not stiff peak). You will still need it to be liquid. 5. Fold in the cream into the cream cheese mixture. Fold until is it well combined. 6. Pour *C amount of cream cheese mixture into a smaller bowl. (refer to the calculation to get even layers above). Add 2 ½ tbsp of Nutella, mix well until combined. Add the melted gelatin, and mix well. 7. Pour the mixture into the pan. Lift the pan and turn in circular motion to level the layer. 8. Tap the pan on the table a few times to release bubbles. 9. Freeze it while preparing for the next layer. For cheese layer 2 10. Repeat step 6 except this time you will only add 1 tbsp Nutella. Repeat step 7, 8 and 9. For cheese layer 3 11. Repeat step 6 except this time you do not add Nutella. Repeat step 7, 8 and 9. For ganache layer (Optional) 12. Add chocolate chip and cream in a bowl. 13. Microwave for 1 minute to melt the mixture. Stir well until there is no lumps. 14. Add melted gelatin (the remaining). Mix well. 15. Pour the ganache into the pan. Lift the pan and turn in circular motion to level the layer. 16. Sprinkle the groundnuts around on the sides. 17. Freeze it for 4-5 hours or overnight for best results. 18. Use a warm towel to slowly lift up and remove the ring pan. 19. The cake is ready to serve. How to make Raspberry Cheesecake. This is a quick and simple way of making the most delicious cheesecake you've ever tasted. Here are the ingredients: - 300 g digestive biscuits - 125 g unsalted butter, melted - 500 g cream cheese - 1 can=397g condensed milk - 1 teaspoon vanilla extract - 250 g raspberries - 30 g caster sugar - 100 mL water Instructions: 1) For the crust, whirl biscuits and melted butter in a food processor until a chunky crumb develops. Then dump the buttery cookie crumble into a springform pan, spreading the mixture evenly over the bottom and pushing it up against the edges so a nice crust develops. 2) For the ripple, combine raspberries, sugar, and water in a pot over medium heat. Bring the mixture to a steady simmer, and let it bubble for 20-40 minutes, stirring occasionally, until the raspberries break down and it thickens into a cohesive sauce. 3) For the filling, whisk together cream cheese and condensed milk, adding the extract along the way. Whisk until the ingredients are combined and the mixture is smooth. Pour the filling over the crust, spreading it evenly. Then add several dabs of the raspberry mixture on top. Run a couple of toothpicks or a skewer through the filling, from raspberry dab to raspberry dab, creating swirls throughout. Refrigerate for at least 3 hours. And enjoy!
