Melt the butter in the microwave for about 30 seconds or in a saucepan. Pour the cookie crumbs and melted butter into a medium sized mixing bowl and mix together with a wooden spoon until well combined. Pour the mixture into an 8inch or 20cm lined cake tin and press down with the back of a spoon until firmly packed and even. Place the cheesecake base into the fridge to set. Cut the chocolate into small pieces with a serrated knife and place into a heat proof bowl. Melt the chocolate over a saucepan of simmering water, stirring occasionally until completely smooth and leave to cool. Pour the heavy cream into a medium sized mixing bowl and beat with a whisk until softly whipped, set to the side. In a large mixing bowl combine the cream cheese and sugar and beat with a whisk until well combined. Pour the softly whipped cream and cooled melted chocolate into the bowl with the cream cheese and sugar. Mix the ingredients together with a whisk for a few minutes until well incorporated. Pour the cheesecake filling into the cake tin and use an offset spatula to smooth out the top. Bang the cake tin on the counter a few times to remove any air bubbles and place into the fridge to firm. To make the topping for the chocolate cheesecake cut the second lot of chocolate into small pieces and place in a heat proof bowl. Pour the cream into a small saucepan and heat over medium heat until it just starts to boil. Remove the cream from the heat and pour over the chocolate and leave to stand for about 5 minutes. Mix the chocolate and cream together until completely smooth and pour over the cheesecake. Recipe: Chocolate Ripple Cake! -------- Start to finish: Preparation: 15 minutes Fridge: 2-4 hours (depending on biscuits) Ingredients (serves 10-12): 1 large thickened cream suitable for whipping (600ml) 1 packet Arnotts Chocolate Ripple biscuits (250g)** 1/4 cup icing sugar 1 tsp vanilla essence 1 tsp rum essence 3 tbsp water Chocolate shavings or nuts to garnish **Alternate biscuits you can use: USA: Nabiscos Famous Chocolate Wafers Canada: Mr. Christie's Chocolate Wafers UK: Apparently Arnotts biscuits are available to you (or so I've been told) Method: Place a large bowl in the freezer for a few minutes to get it super cold (helps to beat the cream faster). Mix rum essence and water while you wait. We are diluting the essence so that it isn't too strong as the flavour will develop over time the longer the cake stays in the fridge when done. Remove bowl form freezer and pour cream into it. Add icing sugar and vanilla essence to cream and beat until stiff peaks form. With a spatula, swipe a layer of cream onto your serving dish. This will serve as your foundation for placing your biscuits on. Place your first biscuit into the rum mixture and coat one side only, place this onto the cream. Spoon some cream onto the next biscuit and sandwich it together with the first one. Continue doing this until all biscuits are used. Continue using the rum mixture on about every third biscuit. you can use it more often or less depending on how strong you want it. Once the cake is assembled, use the remaining cream to cover the top and sides, using a spatula to smooth it out. Place in fridge for 2-4 hours. Time will vary depending on biscuits you use, so to check to see if it is done, use a cake skewer. It is goes in and out with little resistance then it is ready. Garnish the cake with your favourite chocolate or nuts. When serving, cut the cake at an angle so you get the biscuit/cream pattern. Enjoy! -------- Thank you for watching my cooking video. Prepare the crust. Place the oreo cookies into the bowl of a food processor and crush until crumbs form. Add melted butter and process until evenly moistened. 2. Press the mixture into the bottom of a greased 8 inch (20 cm) springform pan using the back of a spoon. Refrigerate until the first layer of mousse is prepared. 3. Prepare dark chocolate mousse. In a heat proof bowl add the semi-sweet chocolate and 1/2 cup (120g) whipping cream. Place the bowl over a saucepan with simmering water, over low heat until all the chocolate is melted. Meanwhile dissolve gelatin in cold water and let it swell for about 5 to 10 minutes. Place the gelatin over low heat just until the gelatin dissolves and pour it over the melted chocolate mixture. Let the chocolate mixture cool completely at room temperature. 4. Whip the remaining 2/3 cup (160g) cold whipping cream until stiff peaks form. Add melted chocolate mixture and mix until well combined. 5. Pour the chocolate mousse over the crust and refrigerate for about 15-20 minutes to set slightly, until you prepare the next layer of chocolate mousse. 6. Repeat the same steps for preparing the milk and white chocolate mousse layers. 7. Refrigerate the cake for 4 hours or overnight to set. 8. Run a knife around the edges of the cake to remove the sides of the pan. 9. Before serving dust the top of the cake with cocoa powder and decorate with fresh berries if desired. Enjoy! This No-Bake White Chocolate Raspberry Cheesecake is one of the best no-bake cheesecakes ever and it’s very easy to prepare. The raspberry heart shapes on top makes it ideal for Valentine’s Day but is perfect for any other occasion as well. To print the recipe check the full recipe on my blog: http://www.homecookingadventure.com/recipes/no-bake-white-chocolate-raspberry-cheesecake Ingredients Makes about 10 servings Crust 7 oz (200g) oreo cookies 4 tbsp (60g) butter, melted Raspberry Coulis 1 1/2 cups (150g) raspberries, fresh or frozen 1/4 cup (50g) sugar 1 tbsp (15ml) lemon juice 1 tsp (2g) cornstarch Cream Cheese Filling 7 oz (200g) white chocolate, small pieces 4 tbsp (60g) whipping cream 1 pound (500g) cream cheese, room temperature 1/4 cup (30g) powdered sugar Lemon zest of a lemon 2 tsp (10g) vanilla extract 1 cup (240g) whipping cream (35% fat), chilled 1. Prepare the raspberry coulis. In a small saucepan, whisk together suga,cornstarch and lemon juice. Add raspberries and bring to a boil over medium-low heat, stirring constantly. Simmer for 5 minutes and remove from heat. Sieve the sauce to remove seeds and set aside to cool down until ready to use. 2. Prepare the crust. Place the oreo cookies into the bowl of a food processor and crush until crumbs form. Add melted butter and process until evenly moistened. 3. Chocolate Mousse Cheesecake INGREDIENTS Crust 20 chocolate sandwich cookies ¼ cup brown sugar 7 tablespoons butter, melted Cheesecake 32 ounces cream cheese, softened 4 ounces melted semisweet chocolate 1 tablespoon cocoa powder 1½ cups sugar 2 teaspoon vanilla extract 4 eggs 1 ½ cup heavy cream ¼ cup powdered sugar Chocolate Ganache 16 ounces chocolate chips 2 cups heavy cream, hot PREPARATION Preheat oven to 300˚F/150˚C. Place cookies in plastic bag and crush them into a fine crumb using a rolling pin. Alternatively, a food processor can be used to crush the cookies. Pour the cookie crumbs into a medium bowl with the melted butter and brown sugar. Mix until the crumbs take on the character of a coarse, wet sand. Pour the crumbs into a 9-inch spring pan. Press the crumb firmly into the pan, making sure to coat the bottom evenly. Once the crust has been formed, place it in the refrigerator to firm up. Add cream cheese, melted chocolate, cocoa powder, and sugar to a large bowl and whisk, either by hand or with an electric mixer, until all the ingredients are incorporated. (NOTE: If mixing by hand, it is recommended to microwave the cream cheese before whisking in order to soften it up.) Add vanilla extract and eggs, and continue to whisk until mixture is smooth and glossy. In a separate bowl, combine heavy cream and powdered sugar. Whisk until the cream develops a mousse-y texture and soft peaks form. Adding a small amount at a time, carefully fold in the whipped cream into the cream cheese batter, being careful not to let the air out of the fluffy mixture. Fold just until incorporated. Once combined, pour the batter over the prepared cookie crust inside the springform pan. Use a spatula to smooth out the top. Give the pan a slight jiggle to release any large air bubbles that may be trapped in the batter. Place the filled pan on top of a sheet of aluminium foil and fold the foil up the sides on the outside of the pan. Then place the wrapped pan into a larger baking pan or dish lined with 2 paper towels at the bottom. The aluminium foil will keep water from seeping into the bottom of the pan and the paper towels ensure that the heat is distributed evenly along the bottom of the pan. Fill the larger pan with about 1 inch of hot water. Bake at 300˚F/150˚C for 60-70 minutes--checking every 15-20 minutes to add more hot water to the larger dish, as necessary. Once out of the oven, immediately run a small sharp knife around the outside of the cheesecake to release it from the pan. Allow the cheesecake to cool completely before removing it from the pan. Prepare the ganache by combining chocolate chips with hot cream. Stir until chocolate is completely melted and ganache is smooth and glossy. Pour ganache evenly over the cooled cheesecake. Refrigerate the ganache covered cake for 30 minutes before cutting and serving. Enjoy! 3 Layer No Bake Nutella Cheesecake - Nothing can go wrong with this chocolaty cheesecake. I have decided to remake this video, as quite a few been asking me about the quantity, I guess the old video was not clearly done due to my inexperience of video shoot. It may look complicated but trust me, it's not hard. And I have shown you the math about how to get even layers. Hope you are inspired to take if not a challenge, then it's a piece of cake. Enjoy! My blog and printable recipe: https://gracioustreatz.wixsite.com/bakewithlove/3-layers-nutella-cheesecake Ingredients: For the base: 250g or 24 oreo cookies 70g (1/4 cup) butter (melt it after weighing) Cheesecake layers: 500g (2 1/4 cup) cream cheese (total) 100g (1/2 cup) sugar 1 tsp vanilla extract 250g (1 cup) heavy cream 1 tbsp gelatin 1/4 cup water Nutella (layer 1 = 2 1/2 tbsp; layer 2 = 1 tbsp) Chocolate ganache: 80g (3/4 cup) chocolate chips 60g (1/4 cup) heavy cream 1 tsp melted gelatin I am using 7 inch round ring baking pan. You can also use spring form pan. How to get even layers: 1. Weigh your mixing bowl. (empty) = A 2. Weigh again after you have mixed the cream cheese and heavy cream. = B B - A ÷ 3 = C* Instructions: For the base 1. Separate the oreo cookies from the cream. Put into a food processor and pulse until it is fine. Add in the melted butter and pulse until we'll combined like a wet sand. 2. Pour onto a prepared ring baking pan. Use a spatula to press down the mixture until it is levelled and flat. Freeze it in the freezer while preparing for the next step. For cheese layer 1 3. In a large bowl, add the cream cheese. Mix until it is softened. Add the vanilla extract. Gradually add in the sugar. Continue mixing until it is creamy and smooth. 4. In another bowl, add the cream. Beat until it is slightly thickened (not stiff peak). You will still need it to be liquid. 5. Fold in the cream into the cream cheese mixture. Fold until is it well combined. 6. Pour *C amount of cream cheese mixture into a smaller bowl. (refer to the calculation to get even layers above). Add 2 ½ tbsp of Nutella, mix well until combined. Add the melted gelatin, and mix well. 7. Pour the mixture into the pan. Lift the pan and turn in circular motion to level the layer. 8. Tap the pan on the table a few times to release bubbles. 9. Freeze it while preparing for the next layer. For cheese layer 2 10. Repeat step 6 except this time you will only add 1 tbsp Nutella. Repeat step 7, 8 and 9. For cheese layer 3 11. Repeat step 6 except this time you do not add Nutella. Repeat step 7, 8 and 9. For ganache layer (Optional) 12. Add chocolate chip and cream in a bowl. 13. Microwave for 1 minute to melt the mixture. Stir well until there is no lumps. 14. Add melted gelatin (the remaining). Mix well. 15. Pour the ganache into the pan. Lift the pan and turn in circular motion to level the layer. 16. Sprinkle the groundnuts around on the sides. 17. Freeze it for 4-5 hours or overnight for best results. 18. Use a warm towel to slowly lift up and remove the ring pan. 19. The cake is ready to serve. SUBSCRIBE HERE: http://bit.ly/2piyn6g Subscriber Count: 668 7 oz (200g) oreo cookies 4 tbsp (60g) butter, melted Raspberry Coulis 1 1/2 cups (150g) raspberries, fresh or frozen 1/4 cup (50g) sugar 1 tbsp (15ml) lime juice 1 tsp (2g) cornstarch Cream Cheese Filling 3.5 oz (100g) white chocolate chips 3.5 oz (100g) dark chocolate chips 4 tbsp (60g) whipping cream 1 pound (500g) cream cheese, room temperature 1/4 cup (30g) powdered sugar 2 tsp (10g) vanilla extract 1 cup (240g) whipping cream (35% fat), chilled\ Prepare the raspberry coulis. In a small saucepan, whisk together sugar, cornstarch and lime juice. Add raspberries and bring to a boil over medium-low heat, stirring constantly. Simmer for 5 minutes and remove from heat. Sieve the sauce to remove seeds and set aside to cool down until ready to use. Prepare the crust. Place the Oreo cookies into the bowl of a food processor and crush until crumbs form. Add melted butter and process until evenly moistened. Press the mixture into the bottom of a greased 6 inch springform pan using the back of a spoon. Refrigerate until the filling is prepared. Prepare the filling. Place white chocolate and dark chocolate and the 4 tbsp of cream into 2 microwave safe bowls and microwave for 1 minute. In a large bowl mix cream cheese until smooth. Add powdered sugar and vanilla extract and mix to combine. Mix in melted chocolate and set aside. In another bowl mix whipping cream until stiff peaks form. Gently fold the whipped cream into the white chocolate and cream cheese mixture. Pour the filling over the prepared crust, use an offset spatula to spread it evenly. Place the raspberry coulis into a squeeze bottle and pipe small circles in a swirl pattern on the top of the cheesecake. Use a toothpick and run it into the center of each circle to create heart shapes. Cover and refrigerate the cheesecake for at least 4 hours or better overnight. These super delicious, easy and fluffy cheesecake slice please anyone. Great recipe for family and friends. Ingredients: 1. 250g choc ripple biscuits (or use your favorite chocolate biscuits) 2. 125g butter, melted 3. 500g cream cheese, softened 4. 1 cup thickened cream 5. 2/3 cup caster sugar 6. 3 eggs 7. 150g oreo biscuits, roughly chopped (cream part remove, use only biscuit part) 8. 100g dark chocolate 9. 80g white chocolate Method: 1. Preheat oven to 160C (315F). Line a 18cm x 22cm (7inch x 8 3/4inch) slice pan with non-stick baking paper, leaving a 5cm (2 inch) overhang or use squire baking pan 20cm x 20cm (8inch x 8inch) or any other similar sizes. Place biscuits in a food processor and process until they are fine crumbs (or place inside two bags and press with rolling pin until it be fine crumbs), add butter and mix. Press the biscuit crumbs into the base of the slice pan and refrigerate for 30 minutes. 2. Place the cream cheese, cream, caster sugar and eggs in a bowl and mix with electric beaters until smooth. Fold through chopped oreo biscuits. Spread mixture evenly over biscuit base and bake for 25-30 minutes, depends of your oven (because I use squire baking pan it bake for about 45 minutes). Allow to cool. 3. Place dark chocolate and white chocolate in the microwave bowls, melt for 30 seconds, stir, and microwave again, stir or until it melted. Spread dark chocolate roughly over the top of the cheesecake and swirl white chocolate over the top. Use a skewer to lightly swirl together, allow to set before cutting with a hot knife. Makes 12 slices or more depends how large slices you cut.
